Marinated mushrooms
Ingredients/Components
- sugar - 1 tsp
- salt - 1/4 tsp
- water - 1/3 c
- red wine vinegar - 1/2 c
- dried basil, crushed - 1/2 tsp
- finely chopped onion - 1 Tbsp
- black pepper - 1/4 tsp
- finely chopped parsley - 1 Tbsp
- red bell pepper, diced - 1/2 item
- small mushrooms - 2 lb
- canola or corn oil - 2 Tbsp
How to make marinated mushrooms:
Clean the mushrooms, cutting the ends of the stems off. Set aside. Place remaining ingredients except bell pepper in a large saucepan and bring to a boil. Add the mushrooms and bell pepper. Bring to a boil again. Reduce the heat and simmer, uncovered, for 5 to 10 minutes or until the mushrooms are tender. Cool to room temperature. Refrigerate in covered container for several hours before serving.Note: Each serving has about 35 calories, 2 g fat, no cholesterol and 46 mg sodium; calories from fat, 58%.
