Ingredients/Components

  • sugar - 1 tsp
  • salt - 1/4 tsp
  • water - 1/3 c
  • red wine vinegar - 1/2 c
  • dried basil, crushed - 1/2 tsp
  • finely chopped onion - 1 Tbsp
  • black pepper - 1/4 tsp
  • finely chopped parsley - 1 Tbsp
  • red bell pepper, diced - 1/2 item
  • small mushrooms - 2 lb
  • canola or corn oil - 2 Tbsp

How to make marinated mushrooms:

Clean the mushrooms, cutting the ends of the stems off. Set aside. Place remaining ingredients except bell pepper in a large saucepan and bring to a boil. Add the mushrooms and bell pepper. Bring to a boil again. Reduce the heat and simmer, uncovered, for 5 to 10 minutes or until the mushrooms are tender. Cool to room temperature. Refrigerate in covered container for several hours before serving.
