Ingredients/Components

  • white wine vinegar - 2 Tbsp
  • olive oil - 3/4 c
  • peppercorns - 6 item
  • bay leaves - 2 item
  • thyme - 1/2 tsp
  • juice of 2 lemons
  • small mushrooms - 2 lb
  • cloves garlic, peeled and thinly sliced - 3 item
  • sprig fresh parsley - 1 item

How to make marinated mushrooms:

Clean mushrooms and trim mushroom stems. Cut mushrooms in half or one quarter the larger ones. Heat oil in a large skillet. Add all ingredients (except parsley for garnish). Simmer the mixture for 2 to 3 minutes. Remove from heat, cover and let mushrooms cool in liquid.

The longer they marinate, the better they can get.
