Marinated mushrooms
Ingredients/Components
- white wine vinegar - 2 Tbsp
- olive oil - 3/4 c
- peppercorns - 6 item
- bay leaves - 2 item
- thyme - 1/2 tsp
- juice of 2 lemons
- small mushrooms - 2 lb
- cloves garlic, peeled and thinly sliced - 3 item
- sprig fresh parsley - 1 item
How to make marinated mushrooms:
Clean mushrooms and trim mushroom stems. Cut mushrooms in half or one quarter the larger ones. Heat oil in a large skillet. Add all ingredients (except parsley for garnish). Simmer the mixture for 2 to 3 minutes. Remove from heat, cover and let mushrooms cool in liquid.The longer they marinate, the better they can get.
