Marinated carrots
Ingredients/Components
- sugar - 1 c
- salt - 1 tsp
- vinegar - 3/4 c
- salad oil - 1/2 c
- pepper - 1 tsp
- Worcestershire sauce - 1 tsp
- medium onion - 1 item
- can tomato soup - 1 item
- carrots, peeled and sliced - 2 lb
- medium green pepper - 1 item
- prepared mustard jar mustard - 1 tsp
How to make marinated carrots:
Cook carrots until tender, but still crispy, about 15 minutes. Drain and cool carrots. Then add onion and pepper, sliced in strips, over carrots. Cover with marinade.To make marinade, combine tomato soup, oil, mustard, salt, sugar, vinegar, Worcestershire sauce and pepper. Cover and refrigerate at least 12 hours. Stir several times. Drain to serve, if desired. Keeps two weeks or more in refrigerator. Leftover marinade can be used as salad dressing.
