Ingredients/Components

  • sugar - 2/3 c
  • salt - 1 tsp
  • vegetable oil - 1/4 c
  • vinegar - 2/3 c
  • dry mustard - 1 tsp
  • pepper - 1/2 tsp
  • Worcestershire sauce - 1 tsp
  • can tomato soup - 1 3/4
  • carrots, peeled and sliced 1/4-inch thick - 2 lb
  • medium onion, cut in thin wedges - 1 item
  • large green pepper, cut in thin wedges - 1 item

How to make marinated carrots:

In a large saucepan over medium heat, cook carrots in a small amount of water until crisp-tender. Drain and cool. Place in a 3-quart serving bowl. Add green pepper and onion; set aside.

In a medium bowl, whisk tomato soup, sugar, vinegar, oil, mustard, salt, Worcestershire sauce and pepper until smooth. Pour over vegetables and stir until all ingredients are well coated. Cover and chill overnight or up to 3 days, stirring occasionally. Serve with a slotted spoon.
