Ingredients/Components
- sugar - 1 c
- vinegar - 1 c
- salad oil - 1/2 c
- mustard - 1 Tbsp
- salt to taste - 1 item
- bell pepper - 1 item
- carrots, sliced - 2 lb
- large onion - 1 item
- tomato soup - 1 c
How to make marinated carrots:
Boil carrots in salted water until tender. Drain. Chop onion and pepper. Mix sugar, mustard and soup. Add vinegar and oil; mix well. Pour over cooled carrots, onion and pepper. Mix lightly and store in refrigerator overnight.This is a delicious side dish with vegetables and meats also. It keeps very well in the refrigerator. In fact, it gets better every day.
