Ingredients/Components

  • salt - 1 tsp
  • vinegar
  • dry mustard - 1 tsp
  • chopped celery - 1 tsp
  • red wine
  • bay leaves - 2 item
  • whole cloves - 10 item
  • whole peppercorns - 10 item
  • large thin sliced onion - 1 item

How to make marinade for venison:

Combine all ingredients, mixing well. Place venison in enamel or earthenware bowl. Pour marinade over it. Cover with cheesecloth. Let stand at least 24 hours or up to 4 days in a cool but not refrigerated temperature. Turn meat often to thoroughly marinate. Cook the meat in the marinade, or roast it and use marinade for gravy.
