  • salt - 1/2 tsp
  • cooking oil - 1 c
  • lime juice - 1/2 c
  • paprika - 3/4 tsp
  • pepper - 1/4 tsp
  • Worcestershire sauce - 1 tsp
  • chopped green pepper - 1/2 c
  • chopped tomatoes - 1 c
  • liquid smoke - 4 Tbsp
  • tequila - 1/4 c
  • round steak, fat trimmed
  • chopped green onions all - 1 c
  • to 10 6-inch flour tortillas - 8 item

How to make margarita fajitas:

Slice partially frozen round steak into thin, long strips. Marinate 2 hours in flat dish with mixture of tequila and lime juice. After draining tequila and lime marinade, mix cooking oil, liquid smoke, Worcestershire sauce, pepper, salt and paprika and marinate meat, covered, for four days.

Heat wok over medium-high heat; necklace with oil mixture (marinade). When hot, add steak strips, stirring occasionally. When 3 or 4 minutes from desired doneness, stir in onion and green pepper. When done, ladle into hot plates, top with chopped tomato. Serve with warmed flour tortillas. Serves 4.
