Ingredients/Components

  • flour
  • sugar
  • double action baking powder - 2 tsp
  • high grade shortening - 1/2 c
  • maraschino cherry juice from 5 oz - 1/4 c
  • maraschino cherries, cut in eighths - 16 item
  • milk - 1/2 c
  • unbeaten egg whites 4 large - 1/2 2/3
  • chopped nuts I sometimes use black walnuts - 1/2 c
  • Add shortening, cherry juice, cherries and milk
  • butter or margarine - 3/4 c
  • maraschino cherry juice - 6 Tbsp
  • vanilla extract - 1/2 tsp
  • chopped red maraschino cherries - 1/4 c

How to make maraschino party cake:

Sift together in bowl flour, sugar and baking powder. Add shortening, cherry juice, cherries and milk. Beat vigorously with spoon for 2 minutes by clock (about 100 strokes per minute) or mix with electric mixer on slow to medium speed for 2 minutes. Add egg whites; beat 2 more minutes. Fold in nuts. Pour batter into prepared pans. Pan size: 2 round layers, 8-inch diameter, and 1 1/4 deep (or 9-inch diameter, 1 1/2-inch deep). Bake at 350° for 30 to 35 minutes. Test with toothpick.Creamy Cherry Frosting:5 1/2 c. confectioners sugar, sifted3/4 c. butter or margarine6 Tbsp. maraschino cherry juice1/2 tsp. vanilla extract1/4 c. chopped red maraschino cherries Combine the confectioners sugar, butter, juice and vanilla in a bowl. Beat with electric mixer at medium speed until smooth and creamy. Add 1 more tablespoon cherry juice if necessary to make frosting into a spreading consistency. Fold in chopped cherries.
