  • eggs - 2 item
  • butter - 1/4 c
  • oil - 3 Tbsp
  • grated cheese - 1/2 c
  • ground beef - 1 lb
  • bread crumbs - 1/2 c
  • salt and pepper to taste - 1 item
  • shredded Mozzarella cheese - 1/2 lb
  • onion, chopped - 1/2 item
  • parsley - 1 Tbsp
  • small onion, chopped - 1 item
  • green pepper, chopped - 2 Tbsp
  • can tomatoes - 1 oz
  • cans water - 3 item
  • clove garlic, chopped - 1 item
  • sauce - 3/4 c
  • Sauce:6 Tbsp
  • Add beef to sauteed onion and pepper and brown well

How to make manicotti:

Saute onion and green pepper in oil until golden brown. Add beef to sauteed onion and pepper and brown well. Add remaining ingredients; mix well.Cheese Filling:1 lb. Ricotta cheese or small curd cottage cheese1/2 c. grated cheese2 eggs1 Tbsp. parsley salt and pepper to taste Combine ingredients and mix well.Sauce:6 Tbsp. oil or salt pork1 small onion, chopped1 clove garlic, chopped1 (29 oz.) can tomatoes2 cans tomato paste (6 oz.)3 cans water1/4 c. butter Put tomatoes in blender to puree. Brown onion and garlic in oil or salt pork. Add butter and brown. Blend together tomato paste, water and pureed tomatoes and add to sauce. Simmer 30 minutes.

To bake: Parboil manicotti 5 minutes. Fill with meat or cheese filling. Spoon small amount of sauce in bottom of pan. Arrange filled manicotti in single layer side by side. Add sauce to cover manicotti. Cover pan with aluminum foil; seal tight. Bake at 400° for 40 minutes. Remove foil; sprinkle with grated cheese and bake, uncovered, 5 minutes.
