Ingredients/Components
- salt - 1/2 tsp
- butter - 2 Tbsp
- cooking oil - 3 Tbsp
- eggs, lightly beaten - 3 item
- pepper - 1/4 tsp
- grated Parmesan cheese - 2 Tbsp
- chopped onion - 2/3 c
- oregano - 1 tsp
- can tomato paste - 1 oz
- Ricotta or cottage cheese - 3/4 c
- Mozzarella cheese, diced - 3/4 lb
- pinch of black pepper - 1 item
- Combine all ingredients in a bowl; mix well
- paste can water - 1 item
- medium can crushed tomatoes - 1 item
How to make manicotti:
Drain the Ricotta or cottage cheese. Combine all ingredients in a bowl; mix well. Divide stuffing into 12 parts. Place a mound of stuffing on each cooked noodle. Spread a thin layer of the meat sauce on the bottom of a baking dish. Arrange sauce over the top. Sprinkle a teaspoon of Parmesan cheese over each of the manicotti. Bake in a preheated oven at 300° for 15 to 20 minutes.Meat Sauce:1 lb. ground beef2/3 c. chopped onion3 Tbsp. cooking oil1 tsp. oregano2 tsp. salt1/4 tsp. pepper1 (6 oz.) can tomato paste1 paste can water1 medium can crushed tomatoes Saute ground beef and onion in the oil about 5 minutes or until just lightly browned.
