Low-fat potato salad
Ingredients/Components
- salt - 1/2 tsp
- plain low-fat yogurt - 1/2 c
- pepper - 1/2 tsp
- sliced green onion - 3/4 c
- chopped fresh parsley - 1/2 c
- Dijon mustard - 1 Tbsp
- dried whole tarragon - 1/4 tsp
- white wine vinegar - 3 Tbsp
- olive oil
- sliced pimento - 1/4 c
- coarsely chopped leeks about 3 medium size - 2 c
How to make low-fat potato salad:
Cover potatoes with water; bring to boil. Partially cover, reduce heat and simmer 25 minutes or until tender. Drain; let cool.Heat oil in a large nonstick skillet over medium heat. Add leeks; saute 5 minutes or until done or lightly brown.
Cut potatoes into 1/4-inch slices. Combine potato slices, leeks, green onion, parsley and pimento in a large bowl. Combine yogurt and next 5 ingredients in a bowl; stir well. Add to potato mixture. Toss gently to coat. Cover and chill.
