Low-fat potato salad
Ingredients/Components
- sugar - 1/4 c
- salt - 1 tsp
- vinegar - 1/4 c
- dry mustard - 4 tsp
- dill weed - 1 tsp
- nonfat mayonnaise
- nonfat sour cream - 1/2 c
- medium red onion, chopped - 1 item
- chopped, fresh parsley - 1 c
- nonfat yogurt - 1/2 c
- small jar diced pimientos, drained - 1 item
- medium red potatoes, boiled, peeled and cubed - 12 item
- hard-boiled egg whites only, chopped - 3 item
How to make low-fat potato salad:
In a large bowl, combine potatoes, onion, parsley, chopped egg whites, pimientos and dill weed. In a small bowl, combine remaining ingredients. Pour over potatoes and mix well. Refrigerate at least 1 hour before serving. Salad can be prepared a day ahead. Yields 12 to 16 servings.Recipe categories: Salads, Side dish, Potato.
