Ingredients/Components

  • sugar - 1/4 c
  • salt - 1 tsp
  • vinegar - 1/4 c
  • dry mustard - 4 tsp
  • dill weed - 1 tsp
  • nonfat mayonnaise
  • nonfat sour cream - 1/2 c
  • medium red onion, chopped - 1 item
  • chopped, fresh parsley - 1 c
  • nonfat yogurt - 1/2 c
  • small jar diced pimientos, drained - 1 item
  • medium red potatoes, boiled, peeled and cubed - 12 item
  • hard-boiled egg whites only, chopped - 3 item

How to make low-fat potato salad:

In a large bowl, combine potatoes, onion, parsley, chopped egg whites, pimientos and dill weed. In a small bowl, combine remaining ingredients. Pour over potatoes and mix well. Refrigerate at least 1 hour before serving. Salad can be prepared a day ahead. Yields 12 to 16 servings.
