Ingredients/Components

  • graham cracker crumbs - 1/3 c
  • sugar - 3/4 c
  • cinnamon - 1/8 tsp
  • vanilla
  • salt - 1/4 tsp
  • eggs, separated - 4 item
  • nutmeg - 1/8 tsp
  • almond - 1/2 tsp
  • cream of tartar - 1/2 tsp
  • grated orange peel - 1 tsp
  • lime juice - 1 Tbsp
  • grated lime peel - 1 tsp
  • skim milk - 1 c
  • unflavored gelatin - 2 pkg
  • cottage cheese creamed - 3 c

How to make low calorie cheesecake:

Sprinkle gelatin over milk in top of double boiler. Beat in egg yolks. Cook and stir until gelatin dissolves and mixture thickens slightly (about 5 minutes). Remove from heat. Stir in sugar, lime juice, vanilla, almond and salt. Set aside.

Blend cottage cheese at high speed in blender until smooth. Stir into gelatin mixture and chill until mixture mounds slightly when dropped from spoon, stirring occasionally.

Beat egg whites and cream of tartar until very stiff. Fold into gelatin mixture. Mix well the crumbs, cinnamon and nutmeg. Sprinkle half evenly in an 8-inch pan. Pour gelatin mixture in and sprinkle top with remaining crumbs. Chill until firm. Yields 12 servings.
