Ingredients/Components

  • salt - 1 item
  • water - 3 c
  • chopped onion - 1 c
  • cloves garlic, minced - 2 item
  • chopped parsley - 1/4 c
  • thyme - 1/4 tsp
  • red pepper - 1 item
  • or 4 strips bacon - 3 item
  • long grain raw rice - 1 c
  • chicken livers, cleaned and chopped - 6 item
  • ??? chopped green onions - 1/2 item

How to make louisiana dirty rice:

Brown bacon in skillet and set aside. Brown onions in bacon grease until brown. Add livers and stir until not wet looking. Add raw rice and stir until rice is a nutty light brown. Add all other ingredients and cook slowly until rice is done. Do not overcook. Season with salt and red pepper to taste.
