Ingredients/Components

  • chuck roast, cubed - 3 lb
  • flour - 3 Tbsp
  • salt - 1 tsp
  • celery salt - 1/2 tsp
  • garlic salt - 1/4 tsp
  • black pepper - 1/2 tsp
  • ginger - 1/2 tsp
  • bacon fat or shortening - 2 Tbsp
  • can tomatoes - 1 oz
  • onions, sliced - 3 item
  • red wine vinegar - 1/3 c
  • molasses - 1/2 c
  • to 8 carrots, diced - 6 item
  • raisins - 1/2 c

How to make louisiana beef stew:

Combine flour and seasonings and sprinkle on beef cubes. Brown in hot fat. Add tomatoes, onions, vinegar and molasses. Bring to boil. Simmer for 2 hours then add carrots and raisins. Cook for 30 more minutes. Serve with rice or mashed potatoes. This dish can be made in a crock-pot.
