Ingredients/Components

  • sugar - 6 lb
  • salt - 4 Tbsp
  • water - 2 gal
  • vinegar - 5 pt
  • green food coloring - 1 item
  • whole cloves - 2 tsp
  • whole allspice - 2 tsp
  • pickles - 15 lb
  • lime - 2 c
  • mixed spices - 2 tsp

How to make lime pickles:

Wash and slice pickles in large container. (Do not use aluminum.) Mix 2 cups lime in 2 gallons water. Pour over pickles. Let set 24 hours. Rinse in 4 different changes of water. Cover with cold water and let soak 3 to 4 hours. Drain.

Cover with the following: 5 pints vinegar, 6 pounds sugar, 2 teaspoons whole cloves, 2 teaspoons whole allspice, 2 teaspoons mixed spices, 4 tablespoons salt and green food coloring. Bring to a boil, pour over pickles. Let stand overnight. Next day, cook pickles in vinegar mixture 35 minutes. Put in jars and seal.

Notes: Some vinegar is stronger, may require more sugar. I also crushed 2 sticks of cinnamon and added to the spices.
