Ingredients/Components
- salt - 2 Tbsp
- water - 1 gal
- vinegar - 1 qt
- pickling spices - 2 Tbsp
- pickling lime - 1 c
- or 3 1/2 lb - 7 c
- cucumbers, chunked - 7 lb
How to make lime pickles:
Soak the first 3 ingredients for 24 hours. Drain and rinse well, then cover with clear water for 1 hour. Drain. Mix remaining ingredients together. Pour mixture over chunked cucumbers and bring to a boil. Add a little green food coloring for looks. Reduce heat and simmer for 30 minutes.
