Lima bean casserole
Ingredients/Components
- sour cream - 1 c
- butter or margarine - 1 Tbsp
- water - 1/2 c
- curry powder - 1 tsp
- can cream of mushroom soup - 1 item
- seasoned bread crumbs - 1/3 c
- medium chopped onions - 2 item
- medium chopped green pepper - 1 item
- frozen baby lima beans - 4 c
- medium chopped red pepper optional - 1 item
- strips crisp, cooked bacon, crumbled - 2 item
How to make lima bean casserole:
Cook baby limas as directed on package. Drain, saving liquid to add as part of the 1/2 cup water. In a saucepan, combine the onion, red and green pepper and water. Heat through until vegetables are tenderized. Blend sour cream and curry powder into the onion and pepper mixture. Add baby lima beans next. Place this mixture into a small casserole dish. Combine bread crumbs with 1 tablespoon melted butter and mix well. Fold in crumbled bacon and sprinkle this mixture on top of lima bean mixture.
