  • lean boneless, tender steak - 1 lb
  • chopped onion - 1/2 c
  • clove garlic, minced - 1 item
  • margarine, melted - 1 tsp
  • sliced fresh mushrooms - 2 c
  • dry red wine - 3 Tbsp
  • cornstarch - 2 Tbsp
  • beef broth - 3/4 c
  • pepper - 1/4 tsp
  • dried whole dill weed - 1/4 tsp
  • plain low-fat yogurt - 1 (8
  • chopped fresh parsley - 2 Tbsp
  • hot cooked noodles - 2 c

How to make light beef stroganoff:

Slice the steak across the grain in 1/2-inch strips. Saute the onion and garlic in margarine until tender. Add steak and mushrooms. Cook, stirring constantly, until steak is browned. Add wine. Cover and simmer 10 minutes. Dissolve cornstarch in broth. Stir into beef mixture. Cook, stirring constantly, until smooth and thickened. Remove from heat. Stir in pepper, dill weed and yogurt. Toss parsley with noodles. Contains 291 calories and 110 mg. cholesterol.
