Ingredients/Components
- butter or margarine - 2 Tbsp
- salt and pepper to taste - 1 item
- onion, chopped - 1 item
- cream or half and half - 1 c
- chicken stock - 4 c
- medium potatoes, skinned and chopped - 2 item
- leftover lettuce plus or minus 1 head, chopped
- Saute onions until translucent
How to make lettuce soup:
In frying pan, melt butter. Saute onions until translucent. Add potatoes and chicken stock. Bring to boil, then simmer for about 15 minutes, until potatoes are tender. Add lettuce; simmer until lettuce is tender, then remove from heat. Process in blender. Return to pan and add cream. Heat until hot.*INXSalads:Recipe categories: Eggs/dairy, Egg, Soups & stews.
