Ingredients/Components
- olive oil - 2 Tbsp
- fresh ground pepper - 1 item
- fresh lemon juice - 2 Tbsp
- cloves crushed garlic - 2 item
- chopped Italian parsley - 1 c
- seasoned rice vinegar - 1/2 c
- diced red onions - 1/4 c
- bag dried lentils - 1 (16
- medium or 1 large tomato, diced - 2 item
How to make lentil salad:
Cook lentils according to package directions. Drain. While lentils are still warm, add vinegar, oil and lemon juice. Mix well. Chill for 1/2 hour to 45 minutes. Add remaining ingredients and chill for at least 1 hour. Mix occasionally while it is chilling.Recipe categories: Salads, Salad dressings, Lentil.
