Lentil chili
Ingredients/Components
- water - 7 c
- chili powder - 1/3 c
- olive oil - 1/3 c
- tomato paste - 1/3 c
- medium chopped onion - 1 item
- red pepper flakes - 1/4 tsp
- cumin - 4 tsp
- can red kidney beans - 1 oz
- canned tomatoes - 2 c
- minced garlic cloves - 2 item
- garbanzo beans - 1 c
- green chopped pepper - 1 item
- brown lentils, rinsed - 2 c
- peeled, chopped carrot - 1 item
- sweet red chopped pepper - 1 item
How to make lentil chili:
Heat olive oil in a large heavy pot. Saute onion, garlic and carrot until tender (5 minutes). Add water, tomato paste, lentils, peppers and beans. Break tomatoes on the side of the pan. Add to mixture. Stir in chili powder, cumin and pepper flakes. Bring to a boil. Reduce heat to medium to low and cook about 45 minutes or until lentils are tender, but not mushy.
