Lemony shrimp salad
Ingredients/Components
- sour cream - 1/4 c
- salt and freshly ground black pepper to taste - 1 item
- fresh lemon juice - 2 Tbsp
- light mayonnaise - 1 c
- green grapes, halved - 4 c
- finely chopped fresh dill - 1/4 c
- watercress for garnish - 1 item
- large shrimp, peeled and deveined - 2 lb
- radishes, thinly sliced and cut into 1/8-inch dice - 6 item
- finely grated zest of 2 lemons
- whole sprigs dill for garnish - 1 item
How to make lemony shrimp salad:
Bring a large pot of water to a boil. Add shrimp and cook 1 to 2 minutes or until just cooked through but not overcooked. Taste to test. Drain. Run under cold water and pat dry. Place shrimp in a bowl with grapes and radishes.In another bowl, mix mayonnaise, sour cream, dill, lemon zest and juice, salt and pepper. Add to shrimp mixture and toss well. Refrigerate, covered, for at least 4 hours before serving for flavors to develop.
To serve, line a platter with watercress. Mound shrimp salad in center and garnish with dill. Serves 10 to 12.
