- salt - 1/4 tsp
- lemon juice - 1 Tbsp
- grated lemon rind - 1/2 tsp
- freshly ground pepper - 1/8 tsp
- olive oil - 1 tsp
- cherry tomato halves - 1 c
- small, fresh green beans
How to make lemony green beans:
Wash green beans. Trim ends. Remove strings. Drop beans into a large saucepan of boiling water. Cook 7 minutes or until crisp-tender. Drain well. Combine the beans and tomatoes in a large bowl; set aside. Combine lemon juice and the next 4 ingredients; stir well. Pour over vegetables, tossing gently to coat.
