  • salt - 1/4 tsp
  • lemon juice - 1 Tbsp
  • grated lemon rind - 1/2 tsp
  • freshly ground pepper - 1/8 tsp
  • olive oil - 1 tsp
  • cherry tomato halves - 1 c
  • small, fresh green beans

How to make lemony green beans:

Wash green beans. Trim ends. Remove strings. Drop beans into a large saucepan of boiling water. Cook 7 minutes or until crisp-tender. Drain well. Combine the beans and tomatoes in a large bowl; set aside. Combine lemon juice and the next 4 ingredients; stir well. Pour over vegetables, tossing gently to coat. Yields 8 servings.
