Lemonade cake



  • sugar - 3/4 c
  • salt - 1/8 tsp
  • butter - 1/2 c
  • eggs, separated - 4 item
  • baking powder
  • sifted cake flour
  • grated lemon rind - 2 Tbsp
  • lemonade concentrated - 1/4 c

How to make lemonade cake:

Cream butter and sugar until fluffy. Add egg yolks, one at a time, beating well after each. Add lemon rind and lemonade concentrate. Gradually add sifted dry ingredients, blending well. Add salt to egg whites and beat until stiff. Gently fold them into batter. Pour mixture into a well-buttered and lightly floured square pan. Bake at 350° for 30 to 35 minutes. Do not overbake. Cool. Dust top with powdered sugar or top with lemon flavored whipped cream.
