Lemon squares

Ingredients/Components

• eggs - 4 item
• granulated sugar - 2 c
• flour - 2 c
• confectioners sugar - 1/2 c
• baking powder - 1 tsp
• pinch of salt - 1 item
• butter or margarine, melted - 1 c
• lemon juice - 6 Tbsp

How to make lemon squares:

Preheat oven to 350°. Crust: Mix 2 cups flour with butter and confectioners sugar until it holds together. Press into a 13 x 9-inch pan. Bake 8 to 10 minutes at 350°.

Filling: Beat together eggs, granulated sugar, lemon juice and salt. Fold in 4 tablespoons of flour and baking powder. Pour over hot crust and bake 20 to 25 minutes at 350°. Sprinkle with confectioners sugar and cut while it's warm.
