Ingredients/Components
- eggs - 2 item
- granulated sugar - 1 c
- salt - 1/4 tsp
- flour - 1 c
- margarine or butter - 1/2 c
- baking powder - 1/2 tsp
- powdered sugar - 1/4 c
- lemon juice - 2 Tbsp
- grated lemon peel if desired - 2 tsp
How to make lemon squares:
Heat oven to 350°. Mix flour, margarine and 1/4 cup powdered sugar thoroughly. Press evenly in ungreased square pan (8 x 8 x 2-inch). Beat remaining ingredients except powdered sugar until light and fluffy, about 3 minutes. Pour over hot crust. Bake just until no indentation remains when touched in center, about 25 minutes longer; cool. Sprinkle with powdered sugar. Cut into about 1 1/2-inch squares.
