  • sugar - 2 c
  • salt - 1/4 tsp
  • flour - 2 c
  • butter - 1 c
  • confectioners sugar - 1/2 c
  • eggs, beaten - 4 item
  • lemon juice and rind - 6 Tbsp

How to make lemon squares:

Crust: Blend butter, salt, 2 cups flour and confectioners sugar. Pat into a 13 x 9-inch pan. Bake at 350° for 20 minutes.

Filling: Mix together the eggs, 4 tablespoons flour, sugar and lemon juice and rind. Pour over baked crust. Bake for 20 minutes at 350° or until brown. Dust with confectioners sugar as soon as taken from oven.
