Lemon squares



  • sugar - 2 c
  • eggs - 4 item
  • flour
  • confectioners sugar - 1/2 c
  • baking powder - 1 tsp
  • lemon juice - 1/3 c
  • 1/2 lb - 1 c

How to make lemon squares:

Preheat oven to 350°. In a large bowl, cream together butter and 1/2 cup of confectioners sugar until fluffy. Add 2 cups of flour. Beat until blended. Spread evenly over bottom of well greased 9 x 13-inch baking pan. (It will be a little difficult to spread around but work with it.) Bake for 20 minutes.

Meanwhile, in a small mixing bowl, beat eggs until light and foamy. Gradually add granulated sugar, beating until thick and blended. Add lemon juice, 1/3 cup flour and baking powder. Beat until thoroughly blended. Pour lemon mixture over baked crust and return to oven for 25 to 30 minutes until golden custard is set. Remove from oven and cool. Sprinkle with powdered sugar and cut in small squares or bars. Enjoy!
