Ingredients/Components
- sugar - 1 c
- salt - 1/4 tsp
- flour - 1 c
- butter - 1/2 c
- baking powder - 1/2 tsp
- powdered sugar - 3 Tbsp
- lemon juice - 3 Tbsp
- grated lemon rind - 1 item
- salt optional - 1/4 tsp
- Filling:2 eggs
How to make lemon squares:
Filling:2 eggs1 c. sugar2 Tbsp. flour1/2 tsp. baking powder1/4 tsp. salt3 Tbsp. lemon juice grated lemon rind Crust: Mix all the ingredients until like pie crust. Press into an 8 x 8-inch pan and bake for 20 minutes at 350° (until lightly brown).Filling: Beat the eggs until fluffy. Gradually add the sugar, flour, baking powder, salt and lemon juice plus rind. Pour over hot crust and bake for 25 minutes at 325°. Let cool. Sprinkle with powdered sugar, then cut into squares.
