  • eggs - 2 item
  • granulated sugar - 1 c
  • salt - 1/4 tsp
  • flour - 1 c
  • baking powder - 1/4 tsp
  • powdered sugar - 1/4 c
  • lemon juice - 2 Tbsp
  • grated lemon peel - 2 tsp
  • softened margarine or butter - 1/2 c

How to make lemon squares:

Heat oven to 350°. Mix thoroughly the flour, margarine and powdered sugar in small bowl. Press evenly with hands in bottom and about 5/8-inch up sides of ungreased square pan, 8 x 8 x 2-inch (if dough is sticky, flour fingers). Bake 20 minutes.

Beat remaining ingredients in a medium bowl on medium speed until light and fluffy. Pour over hot crust. Bake until no indentation remains when touched lightly in center, about 25 minutes. Let stand until cool. Cut into 1 1/2 inch squares. Makes 25 squares.
