Lemon sponge pudding



  • sugar - 1 c
  • salt - 1/8 tsp
  • flour - 1/4 c
  • melted butter - 2 Tbsp
  • lemon juice - 5 Tbsp
  • stiffly beaten egg whites - 3 item
  • milk, scalded
  • grated peel of 1 lemon
  • well beaten egg yolks - 3 item

How to make lemon sponge pudding:

Combine sugar, flour, salt and butter. Add lemon juice and peel. Add to combined egg yolks and milk; mix well. Fold in egg whites and pour into greased casserole or custard cups. Bake in pan of hot water in moderate oven (325°) for 45 minutes. Custard will be on bottom, sponge cake on top.
