Lemon sponge pie



  • sugar - 1 c
  • milk - 1 c
  • flour - 2 Tbsp
  • eggs, separated - 2 item
  • juice and grated rind of 1 lemon
  • butter size of egg, melted - 1 item

How to make lemon sponge pie:

Cream together melted butter, sugar and flour. Add yolks of eggs, beaten to a cream. Then add juice and grated rind of lemon and milk. Add whites of eggs, beaten to a froth. Line a 9-inch pie plate with pastry, unbaked and pour in filling. Bake 25 minutes at 400°. Decrease heat to 350° and bake 10 minutes longer.
