Lemon pudding cake
Ingredients/Components
- sugar
- milk
- flour - 1/2 c
- eggs, separated - 4 item
- melted butter - 1 Tbsp
- lemon juice - 1/3 c
- grated lemon rind optional - 1 tsp
How to make lemon pudding cake:
Beat together egg yolks, lemon juice, lemon rind and butter with rotary beater until thick and lemon-colored. Combine sugar and flour. Add dry ingredients alternately with milk, beating well after each addition. Beat egg whites until stiff. Blend into yolk mixture on low speed of electric mixer.Pour mixture into 8-inch square baking dish. Set in a pan of hot water. Bake in 350° oven 45 minutes or until golden. Cool and chill in refrigerator. Cut into squares. Serve with a spoon of whipped cream or a few fresh berries on top. Makes 6 servings.
