  • butter, softened - 1 c
  • sugar - 2 c
  • eggs - 3 item
  • buttermilk - 1 c
  • baking soda - 1/2 tsp
  • powdered sugar - 2 c
  • hot water - 2 4
  • lemon juice - 1 Tbsp
  • cake flour
  • grated lemon peel - 2 Tbsp
  • Grease and flour a tube pan

How to make lemon pound cake:

Heat oven to 325°. Grease and flour a tube pan. Beat sugar and butter in a large bowl at medium speed. Add eggs one at a time. Mix flour and soda and add to sugar mixture alternately with milk. Beat until well blended. Stir in lemon peel and juice. Spread in pan and bake about 1 hour. Cool 20 minutes in pan then remove to wire rack. Cool completely.Glaze:1/3 c. butter1/2 tsp. grated lemon peel2 c. powdered sugar2 to 4 Tbsp. hot water For glaze, heat butter in a saucepan until melted. Stir in lemon peel and sugar. Add water, 1 tablespoon at a time, until thin enough to drizzle. Spread over cooled cake and allow to drizzle down the sides.
