Ingredients/Components
- butter, softened - 1/2 c
- sugar - 1 c
- eggs - 2 item
- flour - 2 c
- buttermilk - 1 c
- baking soda - 1 tsp
- powdered sugar - 1/2 c
- lemon juice
- poppy seed - 1 Tbsp
- lemon - 1 item
How to make lemon poppy seed muffins:
Glaze:1 Tbsp. lemon juice1/2 c. powdered sugar Grate lemon peel. Beat butter and sugar until creamy. Add eggs, one at a time. Stir in baking soda and peel. Fold in half flour, then half buttermilk. Repeat. Grease muffin cups or line with baking cups. Bake at 375° for 20 to 25 minutes. Mix glaze ingredients and spoon over warm muffins.
