- sugar - 1/2 c
- egg yolks - 3 item
- coconut - 1 c
- margarine, softened - 1/4 c
- Meringue:3 egg whites
- pudding included lemon cake mix - 1 pkg
- Filling:1 can lemon pie filling
How to make lemon pie squares:
Meringue:3 egg whites1/2 c. sugar Filling:1 can lemon pie filling In bowl, combine all crust ingredients. This will be crumbly. Press in bottom of ungreased 13 x 9-inch pan. Bake at 350° for 10 minutes.In bowl, beat egg whites at medium speed until soft peaks form. Gradually add sugar 1 tablespoon at a time, beating at high speed until stiff, glossy peaks form and sugar is dissolved. Spread lemon filling on partially baked crust; spread meringue over lemon filling. Bake an additional 15 to 25 minutes or until meringue is light golden brown. Cool completely; cut into squares.
