Lemon pie



Ingredients/Components
- sugar
- salt - 1/8 tsp
- eggs, separated - 4 item
- heavy cream - 1 pt
- cream of tartar - 1/4 tsp
- lemons - 2 item
How to make lemon pie:
Beat egg whites with salt and cream of tartar until stiff. Add 1 cup sugar, a little at a time. Spread in buttered 9-inch pie plate. Bake at 275° for 25 minutes. Cool.Filling: Beat 4 yolks until thick. Add 1/2 cup of sugar, 1/4 cup of lemon juice and rind of 1 lemon. Cook in double boiler until thick. Cool. Fold in 1 cup of heavy cream. Put filling in crust.
