- butter - 1/2 c
- lemon juice - 1 Tbsp
- minced fresh parsley - 1/3 c
- small red potatoes - 3 lb
How to make lemon parsley potatoes:
Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15 to 20 minutes or until tender. Drain. In a small saucepan, melt the butter; stir in parsley and lemon juice. Pour over potatoes; toss to coat. Yield: 8 servings.Recipe categories: Potato, Lemon, Citrus.
