Ingredients/Components
- sugar
- salt - 1/4 tsp
- butter - 2 Tbsp
- cornstarch - 6 Tbsp
- eggs, separated - 3 item
- boiling water - 2 c
- lemon juice - 6 Tbsp
- grated lemon rind
- baked pie shell - 1 item
How to make lemon meringue pie:
Combine 1 1/2 cups sugar, cornstarch and salt. Gradually stir in boiling water and cook 15 minutes, stirring constantly until mixture thickens. Mix together the slightly beaten egg yolks, lemon rind and juice. Add to sugar-water mixture and cook 2 minutes, stirring constantly. Remove from heat. Add butter when slightly cool. Turn into baked pie shell. Cover with meringue made by gradually beating 1/2 cup sugar into stiffly beaten egg whites.
