Lemon meringue pie
Ingredients/Components
- sugar - 1 c
- salt - 1/2 tsp
- butter - 1 Tbsp
- cornstarch - 5 Tbsp
- boiling water
- cream of tartar - 1/4 tsp
- orange juice - 1/4 c
- 9-inch baked pie shell - 1 item
- Meringue:3 egg whites
- lemon grated rind and juice - 1 item
- to 3 egg yolks - 2 item
How to make lemon meringue pie:
Meringue:3 egg whites1/4 tsp. cream of tartar6 Tbsp. sugar Mix 1 cup sugar, cornstarch and salt together. Add water and cook over medium heat for 1 minute, stirring constantly. Place in double boiler and cook another 8 to 10 minutes. Add slightly beaten egg yolks, orange juice, lemon juice and rind and cook 2 to 3 minutes more. Add butter just before removing from heat. Cool, then pour into shell. Preheat oven to 350°. Prepare meringue. With electric mixer, beat egg whites and cream of tartar until soft peaks form. Add sugar, one tablespoon at a time and continue beating until stiff but not dry. Spread on top of filling, sealing to the edges of pie shell. Bake at 350° for 15 minutes or until browned.
