  • sugar - 3/4 c
  • vanilla - 1/2 tsp
  • salt - 1/4 tsp
  • flour - 2 Tbsp
  • butter - 2 Tbsp
  • cornstarch
  • egg yolks - 3 item
  • boiling water
  • fresh lemon juice - 1/3 c
  • Add water and cook until thick, stirring constantly

How to make lemon meringue pie:

Mix in saucepan 3/4 cup sugar, flour, salt and cornstarch. Add water and cook until thick, stirring constantly. Beat until thick the egg yolks, 1/4 cup sugar and small amount of hot mixture to eggs. Then stir eggs into hot mixture. Add 2 tablespoons of butter and cook 3 minutes, stirring constantly. Add lemon juice and pour into cooked pie shell. Top with meringue.Meringue:3 egg whites3/8 c. sugar1/2 tsp. vanilla Mix all together and beat until stiff. Pile on lemon pudding and brown at 350° for 10 to 15 minutes. Makes one 8-inch pie, double for 10-inch pie.
