Lemon meringue pie
Ingredients/Components
- sugar - 2/3 c
- salt - 1/4 tsp
- cornstarch - 1/4 c
- eggs, separated - 3 item
- water
- oleo - 1 Tbsp
- juice of 3 lemons
- pie crust - 1 item
- grated peel of 3 lemons
- shakes of cream of tartar - 2 item
How to make lemon meringue pie:
Bake crust in 400° oven until brown. Mix first 3 ingredients and add water; cook until thick. Add beaten egg yolks with 3 tablespoons water to hot mixture. Cook until thick and clean. Add oleo and lemon juice and peel. Beat egg whites with cream of tartar slightly and start adding sugar, 2 tablespoons at a time. Whip until fluffy but not dry. Pour filling into crust and cover with meringue and cover with peel. Bake 25 minute at 300°. Let meringue cool in oven.Recipe categories: Pie, Pies and tarts, Cakes.
