  • sugar - 1 c
  • salt - 1/2 tsp
  • flour - 3 Tbsp
  • cornstarch - 3 Tbsp
  • eggs, separated - 3 item
  • boiling water
  • lemon juice - 1/4 c
  • grated rind of 1 lemon

How to make lemon meringue pie:

Cook sugar, salt, cornstarch, flour, boiling water and egg yolks in double boiler until thick, stirring constantly. Just before it is thick, add 1/4 cup lemon juice and grated rind. Pour into baked pie crust. Beat egg whites, adding 2 tablespoons sugar for each egg white. Place meringue on pie filling and brown in oven at 350°.
