Ingredients/Components
- sugar - 1 c
- salt - 1/2 tsp
- flour - 3 Tbsp
- cornstarch - 3 Tbsp
- eggs, separated - 3 item
- boiling water
- lemon juice - 1/4 c
- grated rind of 1 lemon
How to make lemon meringue pie:
Cook sugar, salt, cornstarch, flour, boiling water and egg yolks in double boiler until thick, stirring constantly. Just before it is thick, add 1/4 cup lemon juice and grated rind. Pour into baked pie crust. Beat egg whites, adding 2 tablespoons sugar for each egg white. Place meringue on pie filling and brown in oven at 350°.Recipe categories: Pie, Pies and tarts, Cakes.
