Lemon meringue pie
Ingredients/Components
- sugar - 3/4 c
- eggs, separated - 4 item
- water - 1 c
- baked pie shell - 1 item
- juice and grated rind of 1 lemon
- sugar for meringue - 2 Tbsp
- flour, made into paste - 3 Tbsp
How to make lemon meringue pie:
Boil water and sugar together; add flour paste and cook 5 minutes. Mix the yolks of eggs, lemon juice, rind and salt. Add 1 tablespoon of hot sugar mixture to yolk mixture and stir. Repeat 3 times. Add this mixture to the remainder of the sugar mixture. Cool slightly. Fluff 1/2 of egg whites until stiff. Add to sugar mixture. Pour into previously baked crust. Make a meringue of the remaining egg whites by beating whites until stiff. Add 2 tablespoons sugar. Cover pie with meringue.
