Lemon curd
Ingredients/Components
- sugar - 1/2 c
- egg yolks, slightly beaten - 4 item
- unsalted butter - 4 Tbsp
- freshly squeezed lemon juice - 1/2 c
- lemon zest freshly prepared - 1 Tbsp
How to make lemon curd:
In heavy saucepan or double boiler, combine butter, sugar, lemon juice and egg yolks. Cook over low - simmering heat, stirring constantly until mixture thickens enough to heavily coat the back of a spoon. Use wood spoon to stir mixture. Don't let mixture boil or it will curdle. Pour curd into small bowl or jar and stir in zest. Use as is with toast, scones, tarts, cake fillings or mix with 1/2 cup whipped cream or 1/4 cup Cool Whip.
