  • sugar - 1/2 c
  • milk
  • salt - 1/4 tsp
  • cornstarch
  • coconut
  • sifted flour - 1/2 c
  • oleo - 1 Tbsp
  • beaten egg - 1 item
  • lemon juice - 1/4 c
  • soft margarine - 1/2 c
  • few drops vanilla - 1 item
  • grated rind - 1/2 tsp
  • cracker crumbs vanilla or graham - 3/4 c

How to make lemon crunch:

Crust:1 1/2 c. coconut3/4 c. cracker crumbs (vanilla or graham)1/2 c. sugar1/2 c. sifted flour1/2 c. soft margarine Combine sugar, cornstarch and salt. Stir in milk. Cook until thick, stirring constantly. Mix egg and lemon juice; stir in a little of the hot mixture and mix. Add to hot mixture. Cook and stir over low heat 2 minutes. Add lemon peel, margarine and vanilla. Set aside.

Mix ingredients for crust. Place half in 8 x 8 x 2-inch pan. Pour in filling; top with remaining coconut mixture. Bake in 400° oven about 25 minutes or until top is golden. Chill. Cut in squares. Serve with whipped cream or Cool Whip.
