Ingredients/Components

  • salt - 1 tsp
  • water
  • lemon juice - 1/2 c
  • pepper - 1 tsp
  • olive oil - 2 Tbsp
  • chopped parsley - 1/2 c
  • couscous - 10 oz
  • chopped mint - 1/4 c
  • large chopped tomato - 1 item
  • seeded, peeled, chopped cucumber - 1 c
  • sliced and chopped scallions - 1 c

How to make lemon couscous:

Bring water to a boil in saucepan; stir in couscous. Remove from heat. Cover and let stand for 5 minutes. Fluff with a fork. Combine couscous with tomato, cucumber, scallions, parsley and mint; toss. Combine lemon juice and next 4 ingredients. Stir well. Pour over couscous mixture and toss. Yields 8 (1-cup) servings.
