Lemon couscous
Ingredients/Components
- salt - 1 tsp
- water
- lemon juice - 1/2 c
- pepper - 1 tsp
- olive oil - 2 Tbsp
- chopped parsley - 1/2 c
- couscous - 10 oz
- chopped mint - 1/4 c
- large chopped tomato - 1 item
- seeded, peeled, chopped cucumber - 1 c
- sliced and chopped scallions - 1 c
How to make lemon couscous:
Bring water to a boil in saucepan; stir in couscous. Remove from heat. Cover and let stand for 5 minutes. Fluff with a fork. Combine couscous with tomato, cucumber, scallions, parsley and mint; toss. Combine lemon juice and next 4 ingredients. Stir well. Pour over couscous mixture and toss. Yields 8 (1-cup) servings.Recipe categories: Grains, Side dish, Pasta, rice and grains.
