Lemon coconut squares


Ingredients/Components
- vanilla - 1/2 tsp
- salt - 1/4 tsp
- flour
- brown sugar
- coconut
- baking powder - 1/2 tsp
- chopped nuts optional - 1 c
- margarine - 1/2 c
- Filling:2 eggs, beaten
How to make lemon coconut squares:
Filling:2 eggs, beaten1 c. brown sugar1 1/2 c. coconut1 c. chopped nuts (optional)2 Tbsp. flour1/2 tsp. baking powder1/4 tsp. salt1/2 tsp. vanilla Mix flour, sugar and margarine together as for a pie crust. Pat into 13 x 9-inch pan and bake at 275° for 10 minutes. Remove from oven. Change oven temperature to 350°.Mix filling ingredients together and spread over baked mixture. Bake for approximately 20 minutes or until done.
While still very warm, spread with frosting made of 2 cups confectioners sugar, 1 tablespoon melted butter and juice of 1 lemon. Cool and cut.
