Lemon coconut balls
Ingredients/Components
- sugar - 2/3 c
- vanilla - 1/2 tsp
- salt - 1/2 tsp
- flour
- butter - 1/2 c
- soda - 1/2 tsp
- egg - 1 item
- cream of tartar - 1/4 tsp
- lemon juice - 1/4 c
- moist shredded coconut, chopped - 1 c
How to make lemon coconut balls:
Cream butter and sugar until light and fluffy. Beat in egg. Sift dry ingredients and add alternately with lemon juice and vanilla, mixing well after each addition. Chill dough.
